Garlic Butter Roasted Mini Potatoes
With their creamy, tender centers, and crisp on the outside, everyone loves these garlic butter roasted mini potatoes. A simple and delicious side dish that pairs nicely with just about any meal.
I recently stumbled upon the cutest tiny mini potatoes called peewee potatoes at the store and I couldn’t resist buying some. I decided to do something simple with them so I made this super easy garlic butter roasted mini potatoes recipe. These little peewee potatoes were so creamy & delicious and the garlic butter made them extra flavorful. These tasty roasted mini potatoes paired nicely with flank steak with balsamic roasted tomatoes and a big garden salad.
How to Make Garlic Butter Roasted Mini Potatoes
Preheat the oven to 375 degrees.
Place the potatoes and onion on a baking sheet. Drizzle them with the olive oil then season with sea salt and freshly cracked pepper, to taste; toss to coat evenly.
Place into the oven and roast for 10 minutes; stir the potatoes and onion around with a spatula then return to the oven and roast for another 5-7 minutes, or until the potatoes are tender.
Add the butter and minced garlic to the baking sheet and toss to evenly coat the potatoes an onion; return to the oven to roast for 1-2 minutes. Remove from the oven and top with parsley. Taste & re-season with sea salt & freshly cracked pepper, if needed. Serve immediately. Enjoy.
