Roasted Greek Chicken Thighs
These roasted Greek chicken thighs were a super easy dish to throw together, smelled fantastic while they roasted and tasted wonderful. My kids both commented on how tasty the chicken was and my husband and I both thought it was too. I used my Greek seasoning blend to season the chicken and it made them so flavorful. I served these roasted Greek chicken thighs with mashed potatoes and browned butter broccoli with mizithra for a healthy and delicious meal my entire family devoured.
How to Make Roasted Greek Chicken Thighs
Make the Greek seasoning blend.
Season both sides of the chicken thighs with the seasoning blend, to taste. Season both sides with a bit of sea salt and freshly cracked pepper, to taste. If time permits, season the chicken and place it on a plate in the refrigerator uncovered for 2-3 hours before cooking. Remove the chicken from the refrigerator 30 minutes prior to cooking.
Preheat the oven to 400 degrees.
Heat 1 tablespoon of olive oil (or butter) in a cast iron skillet over medium-high heat. Place directly into the HOT skillet skin side down, and cook for 4 minutes, or until the skin is golden brown and flips easily. Flip the chicken over and place it into the preheated oven. Roast in the oven for 20-25 minutes, or until the chicken is golden brown and cooked through.
Remove from the oven and use tongs to remove the chicken from the skillet to a serving plate. Serve the chicken thighs with fresh lemon on the side. Serve immediately. Enjoy.

Great looking recipe! We eat a lot of chicken, and also tend to cook a lot of chicken thighs — much better flavor than some of the other cuts. Like the Greek twist in this dish!
